Is there away to recover deleted private messages?

Normally no. Sometimes, you can get the recipient to forward the PM history if they did not delete their side. In extreme cases, we can recover them through a server roll back (but that would be in EXTREME cases).

When a message is deleted, there is no trash bin like most inboxes. It goes poof.

Check your sent folder.

This is true. Perhaps you have a message chain sitting in your sent folder!

Once you delete it, it's gone. The only way to retrieve it is from the recipient or the unicornishly rare server rollback (Seriously... without a court order, you're more likely to see an ACTUAL unicorn!).
It should be totally gone from your Sent messages (happened to me before).

Is there an easier way to delete older messages, like an auto delete aged message function we can use? I just deleted a page of current sent items because I was making space and didn’t notice that the page hadn’t jumped to the end yet.

Page by page is how I've always done it. Also, after a trade is complete (feedback from both parties), I'll often clean out the correspondence on that trade, since I no longer need those "records".
